The Baker’s Duck to Open Second Toowoomba Location Inside Historic Building Near Railway Station

The beloved artisan bakery — drawing over 10,000 visitors a week — will give guests their first-ever view into the kitchen where it all begins.

TOOWOOMBA, QLD — The Baker’s Duck has purchased a historic building near the Toowoomba Railway Station and will open it as the bakery’s second location later this year. The new site at 1 Railway St, Toowoomba City on the northern side of the railway tracks will feature a full café, an expanded production kitchen, and a first for the bakery: a glass-fronted kitchen wall so guests can watch the artisans at work.

The existing Campbell Street location will continue to operate unchanged. The new site addresses growing demand at a shop that regularly reaches capacity, and adds dedicated off-street parking — a long-standing challenge for the current location.

The standout feature of the new site is a generous stretch of glass separating the café from the production kitchen. For the first time, visitors will be able to watch The Baker’s Duck’s pastry chefs shaping, filling, and baking the handcrafted semi-sourdough pastries that have made the bakery a destination well beyond Toowoomba.

The building itself carries a century of Toowoomba history. Its worn concrete floor was once the city’s original skating rink — predating Skate Haven — and above it sits the old railway guard’s lodge. The renovation will preserve the character of the space: the concrete floor polished rather than replaced, the northern façade opened up for outdoor seating beneath an established grapevine, and warm lighting throughout.

The new facility will also consolidate The Baker’s Duck’s production operations. Baking currently takes place across multiple sites to handle demand. The new building brings bread-making, preparation, and storage under one roof, with the existing Campbell Street kitchen continuing its daily bake. Every pastry takes over three days to produce; the new space is designed to support each stage of that process in a purpose-built, climate-controlled environment.

The expansion was driven not by a growth strategy but by the ambitions of the bakery’s own team. When Executive Chef Millie Dunn and her colleagues raised the idea of having more space to do more refined work, the owner acted.

The new location at 1 Railway St, Toowoomba City will include a dedicated accessible entrance on the northern side of the building, along with free one- and two-hour council parking directly outside.

The Baker’s Duck says both locations will carry the same full menu, the same product quality, and the same front-of-house experience.
